Does anyone use this combo? What is the load set up for your weapon, I always like to have various examples of other parameters before I start on loads. 
I have Sierra 180 Game King load and PMP load recipes to compare against, now hoping to have someone else's load specifically for this combination.

Do you have 180gr Sierra GK, and want  comparable PMP loads for 308?

Or do you have another bullet in mind, and only 180gr Sierra GK to compare against?

Total load development to animal = 6 bullets
1  x fouler shot and chroni reading
3 x shots for group - load development ended right there.
1 x shot 2 clicks left
1 x shot Impala

What speed did you get on the chrony?

2554 fps

Here is the QL calc. Max pressure for the 308 is given as 62K psi, but I leave my pressure at 60K as shown in the calc below. I have added 10fps for the distance to the chrony. The calc shows that the load is exactly on the node. Compare the barrel times.

Pretty much as you predicted, you also said start lower for safety, one of your mails gave exactly this prediction.

Are you not interested in seeing if that group can be improved on ? Perhaps a few rounds shorter and longer, just to see ?
